We have that option available in OPS ( Old Product Screen) on the edit inventory page under Product details.

Shop is switched to the new product screen and wanted this for taxes purpose.

Earlier they have had the option to tap a button on the edit product and it would record the date the product was inventoried as shop is looking for looking for something taking year end physical inventory.
